Mejillones en escabeche- Mussels in pickled sauce

Llevaba mucho tiempo detrás de hacer mejillones en escabeche y es que se los había visto a mi querida amiga y jefa en el Asaltablogs Marga, y como le debía un asalto desde hace un par de años pues ya tenía la excusa perfecta para hacerlos.
Como podéis ver en la receta yo los hice con mejillones cocidos, pero también se pueden usar mejillones crudos, lo único que tenéis que hacer previamente es limpiarlos y cocerlos, luego quitáis las cascaras y dejáis los mejillones limpitos y listos para hacer esta delicia.

I have been waiting so long to make these pickled mussels, the recipe is from my friend and “boss” in Asaltablogs, Marga. I also owe her an special asaltablogs so I had the perfect excuse to do it.

As you can see in the recipe, I used cooked mussels, but you can also use raw mussels, you only have to clean and boil them and remove the shell.

Ingredientes
– Medio kilo de mejillones cocidos y sin las conchas.
– 3 dientes de ajo.
– 2 hojas de laurel.
– 1 cucharada de tomillo.
– 1 cucharada de orégano.
– 1 cucharada de pimentón dulce.
– Una pizca de pimienta.
– 45 ml de vinagre.
– 100 ml de aceite de oliva virgen extra.
– Sal.
Freír los ajos cortados en laminas grandes en el aceite. Hacerlos a fuego lento, añadir el orégano, el tomillo y las hojas de laurel. Mantener a fuego suave.
Transcurridos cinco minutos, retirar la fuente sartén del fuego y dejar que se enfríe un poco antes de añadir el pimentón (así evitaremos que se nos queme). Volver a poner en el fuego y añadir el vinagre. Dejar unos minutos hasta que se integren los sabores y añadir un poco de sal.
Colar el escabeche.
Echar los mejillones limpios y cocidos en el escabeche y poner al fuego hasta que coja sabor sin que llegue a hervir.
Ingredients
– 500 gr cooked mussels
– 3 garlic cloves.
– 2 bay leaves.
– 1 Tsp of thyme
– 1 Tsp of dried oregano.
– 1 Tsp paprika
– 45ml. vinegar
– 100 ml olive oil.
– A pinch of salt

Peel and cut garlics and fry them in the olive oil. You have to do them on a slow heat. Add dried oregano, thyme and bay leaves. Keep them on a slow heat.

After five minutes remove the pan from the heat and let it cool down for a while before add the paprika (to avoid burning). Return pan to the heat and add vinegar. Let there a few minutes.

Strain the marinade

Spoon the mussels in the marinade and place all on the heat (be carefeul because they don’t have to boil).
